We ordered the Lean Brisket and the Pork Sandwich... Outstanding!
I would also recommend the sweet tea, it was super good!
My wife wants another sugar cookie from them.... she said it was the best sugar cookie she's ever had.
Different kind of dining experience, but the service was nice.
Expect a wait, but man the food is tasty! -

Miller's Smokehouse is very good. Personally, the brisket is one of the top I have had. I wasn't a big fan of the chopped brisket, but their sausage, ribs and prime brisket was incredible!
If you are able to stop by, do it!! -

This goes to show you can't always count on reviews. Ironic, I know.
Highly disappointed in this place after reading multiple reviews raving about it.
Ordered a brisket sandwich, and given a choice of lean or moist. Bc I didnt want dry brisket, I chose moist. Mistake! There was seriously more fat than meat on my sandwich. Not marbled brisket, but huge chunks of fat!
And even counting the 60/40 ratio of fat/meat, the size of the sandwich was underwhelming.
For the price of bbq these days, I had to complain to the staff. I asked for just some lean slices to remake my sandwich and I got a whopping 3 small half-slices of brisket. Enough to replace maybe half of my sandwich if lucky.
Also, the order taking process needs much work!
One cashier for the majority of lunch hour (when there are 2 registers with a line to the door), and the placing of the order was not exactly efficient. Either the computer system is slow or the cashier needs more training, but either way the first impression of this place doesn't get a check mark.
Another odd thing or two...
They tell you which table to sit at when there are tables all over. They ask if you'd like pickles or onions on sandwich (rather than place those out for folks to get themselves -- I guess so they can be tight with those also, barely had any onions on sandwich).
The 3 positives: beans were good, tea was excellent, and the building is a neat setting.
Overall, I wouldn't go back.
This place is lucky they're in Belton and not any closer to Austin/Lockhart/Elgin/Taylor/Giddings/Luling etc.
Numerous things would have to be different to compete with those well known bbq joints. -

Don't know how I missed this joint for so long as I thought I had most of the TM Top 50s within striking distance on my radar. But happily, reviewing the list before leaving Austin for home in FTW I found Miller's. If you hain't been here yet it's the real deal. We visited for lunch on Memorial day after three nights in Austin doing our best down there to keep things weird. As we are leaving early Thursday for a long weekend in NOLA followed by a couple weeks in Pensacola we wanted to avoid cooking for the nest couple days so we ordered up. Half pound of brisket (as always fatty end, they call it moist here), half rack of ribs, half a yard bird, one hot link sausage and an individual order of beans.
You order here at a counter with uncooked sausages for sale along with cold sides and desserts. Take a number for a table and your food is brought to you. Beer and cocktails are ordered at a separate counter. So if the line is long you can get a libation to drink as you wait in line.
Brisket: perfectly cooked, super juicy, flavorful bark, perfectly rendered fat, great smoke flavor. Excellent. Don't you dare put any sauce on this or I'm tellin' on ya.
Ribs: again, perfectly cooked, great smoke flavor, the meat pulled from the bone just as God intended on a properly cooked rib. With this l liked a little of their sweet sauce.
Yard Bird: Perfectly cooked, succulent and tender with a delish BBQ sauce coating. One of the best ever according to the Secretary of the Interior at my house.
Hot Link Sausage: Very good! Casing can be a bit chewy, but delicious.
Beans: Meh, very bland in Madame Secretary's estimation. But then her bean recipe is pretty much the Gold Standard.
Nice beer selection. No vino.
As always whenever I can I wander around back to see what wood is going into the pits. Could not find a single stick but saw it burning in the smoker pit pic I am posting. This row of pits is insane!
About that time the door to the store opened and out came the amiable and talented pitmaster Dirk Miller hisownself bearing a bag of sausages for the smoker.
Post oak with some occasional live oak snuck in by the suppliers. Dirk said he was waiting on wood to arrive at any moment.
So glad to make this discovery for barbecue on our FTW to Austin trips.

Was in Ft Hood visiting son when we decided to stop here per my husband's recommendation. We had drove down from CLE and made some stops along the way but nothing compared to this place. Tender fall off the bone ribs and the most flavorful brisket I've had in a very long time!!! You get food quality food and good value. The deserts are also a must. Can't wait to go back when I return to visit my son again.
